Rockfish Fish Tacos
What better way to enjoy the catch of the day with family and friends. Fresh fish, cold brews and plenty of tacos……
Here is a super simple but tasty recipe for fish tacos.
Ingredients:
taco ingredients
1 1/2 pounds boneless skinless white fish fillets - choose a firm white fish like cod or halibut
15 corn or flour tortillas for serving
olive oil or oil with a high smoke point for frying
1 cup flour
1 egg
1 1/4 cups panko breadcrumbs
Cold beer of your choice
feel free to spice up with Cayenne peppers, garlic, salt, cornstarch to thick… Choices are endless
topping ingredients
2 1/2 cups shredded cabbage
2 ripe avocados, thinly sliced
salsa - any brand or home made
Fresh lime wedges for garnish
You can add other taco toppings if you prefer-- salsa fresca, cheese, fresh chopped cilantro, jalapeno or hot sauce for a kick
Cut fish into strips ( approx 2 inches long - 1 inch) best guess for bite size taco pieces
heat 1/4 inch of cooking oil in a skillet over medium high.
Mix In a medium mixing bowl: the beer , flour and egg , The batter should be thick like pancake batter, but if it appears clumpy or overly thick add more beer, seltzer or water until mixture is thin enough for dipping.
in seperate bowl pour panko and any desired seasonings.
Dip fish, piece by piece, in wet batter mix then gently roll each piece in panko crumbs to coat
carefully set in hot oil.
cook for about 2 mins a side or until golden brown.
Place on rack or plate with paper towels to collect excess oil.
Drink a beer while cookin and tellin story about the catch…
Warm your torillas, put out the fixens out family style and enjoy the feast.
